Dip one rice paper into water for a few seconds or just until moistened (rice paper will still be firm but will continue to soften during assembly). Place rice paper on work surface. Place a few cucumber sticks across the lower third of the rice paper. Top with some of the tofu, carrots, and mint. Fold bottom of rice paper over filling. Fold in sides; roll up tightly. Repeat with the remaining rice papers, cucumber, tofu, carrots, and mint. Serve immediately with soy sauce for dipping.
