Toasties with Egg Salad

Directions

  1. Preheat oven to 400 degrees F. Brush one side of each bread slice with olive oil. Arrange on a large baking sheet. Bake for 8 to 10 minutes or until toasted. (Or, grill slices on the rack of a covered grill directly over medium heat for 1 to 2 minutes per side.)
  2. In a large bowl stir together the eggs, shallot, capers, parsley, chives, lemon juice, mustard, 2 tablespoons olive oil, salt, and pepper to taste. Serve on top of toasted bread slices and garnish with additional shallot and parsley.

I've tried many egg salad recipes and this one is by far the best! This is truly a gourmet recipe. We make this every week. The combination of the warm, crunchy toastie with the cool egg salad is absolutely delicious.! The key is to slice the bread very thinly before toasting. That way when you spoon the egg salad on to the toastie, it is not to thick to eat easily.
