Three-Cheese Tortellini in Brown Butter Sauce
- In a large pot cook tortellini in boiling salted water with 1 tablespoon of the olive oil for 7 to 9 minutes or until tender. Keep warm.
- Meanwhile, in a large skillet heat the remaining 1 tablespoon oil over medium heat. Add pancetta; cook until crisp. Remove pancetta from skillet; drain on paper towels. Drain fat from skillet.
- For brown butter sauce, add butter to the skillet. Cook over medium heat until butter melts and begins to brown and smell nutty. If desired, stir in honey.
- Transfer tortellini to a serving bowl. Add spinach and the brown butter sauce; toss to mix. Season to taste with salt and pepper. Top with pancetta and cheese.
