Four ingredients (plus a couple pantry staples) and 30 minutes are all you need to get this three-cheese tortellini recipe on the table. Pasta dishes don’t come much easier--or delicious--thank this brown butter sauce-topped entree.
In a large pot cook tortellini in boiling salted water with 1 tablespoon of the olive oil for 7 to 9 minutes or until tender. Keep warm.
Meanwhile, in a large skillet heat the remaining 1 tablespoon oil over medium heat. Add pancetta; cook until crisp. Remove pancetta from skillet; drain on paper towels. Drain fat from skillet.
For brown butter sauce, add butter to the skillet. Cook over medium heat until butter melts and begins to brown and smell nutty. If desired, stir in honey.
Transfer tortellini to a serving bowl. Add spinach and the brown butter sauce; toss to mix. Season to taste with salt and pepper. Top with pancetta and cheese.
