Tequila-Spiked Queso Fundido

A delicious twist on the classic Mexican cheese dip. This tequila spiked queso fundido has an added quick with the tequila flavoring, and is guaranteed to be the life of the party. Serve with chips or topped with chorizo for a tasty queso dip.

Tequila-Spiked Queso Fundido

Directions

  1. Preheat oven to 350 degrees F. In a medium or large skillet cook pepper and onion in hot oil until tender. Remove pan from heat. Carefully add tequila. Return to heat and simmer, uncovered, for 15 to 30 seconds until most of the tequila has evaporated but vegetables are still moist.
  2. Spoon mixture into the bottom of a 6- or 7-inch ovenproof skillet or 2-cup au gratin dish. In a medium bowl toss cheese with flour; sprinkle cheese mixture over vegetables.
  3. Bake, uncovered, about 10 minutes or until cheese is just melted. Sprinkle with tomato and cilantro. If desired, serve with tortilla chips or serve in warmed tortillas topped with chorizo.
