Sweet & Spicy Bourbon Pulled Pork

Ingredients

  • 2 pound boneless pork shoulder, trimmed

  • Salt and black pepper

  • 1 large sweet onion, cut into thin wedges

  • 1 18 ounce bottle (1 3/4 cups) hot and spicy barbecue sauce

  • 1 cup Dr. Pepper carbonated beverage, cola, or root beer (not diet)

  • ¼ cup bourbon

  • 8 hamburger buns or kaiser rolls, split and toasted

  • 1 recipe Creamy Coleslaw or deli coleslaw (optional)

Creamy Coleslaw

  • cup mayonnaise

  • cup sour cream

  • 2 tablespoon cider vinegar

  • 2 teaspoon sugar

  • ½ teaspoon celery seed

  • ¼ teaspoon salt

  • 4 cup shredded red and/or green cabbage

  • 1 cup shredded carrot (2 medium)

Directions

  1. If needed, cut meat to fit into a 3 1/2- or 4-qt. slow cooker. Sprinkle meat with salt and pepper. Place onion wedges in the cooker. Top with meat.

  2. In a large bowl stir together barbecue sauce, carbonated beverage, and bourbon; pour over meat. Cover and cook on low 8 to 10 hours or high 4 to 5 hours.

  3. Remove meat from cooker. Shred meat using two forks and place in a bowl. Using a slotted spoon, remove onion from cooking liquid and add to meat. Skim fat from cooking liquid. Stir enough of the cooking liquid into meat mixture to moisten. Fill buns with meat mixture and, if desired, top with Creamy Coleslaw.

Creamy Coleslaw

  1. Combine mayonnaise, sour cream, vinegar, sugar, celery seed, and salt in a large bowl. Stir in cabbage and carrot. Cover and chill for at least 2 hours before serving. Store in the refrigerator up to 24 hours. Stir before serving. Makes 3 1/2 cups.
