Arrange bottoms of rolls in a 13x9-inch baking pan or 3-qt. rectangular baking dish. In a bowl combine the next four ingredients (through pickled jalapeno peppers). Spoon onto roll bottoms. Top with cheese and roll tops. In a bowl combine the next four ingredients (through black pepper). Drizzle over rolls. Bake, covered, 15 minutes. Uncover; bake 10 to 15 minutes more or until cheese is melted and roll tops are light brown. Make Ahead Assemble the sandwiches and do not drizzle with butter mixture.
