Sweet-Spicy Barbecued Chicken Sliders

This shortcut chicken recipe can take advantage of a purchased deli chicken or leftover cooked chicken that you shred. We love the simplicity of making them as rotisserie chicken sliders. Plus, the recipe serves 12! So it's party-ready or a great way to have leftovers for the week.

Ingredients

  • 12 3 inch sandwich rolls

  • 2 ½ cup shredded cooked chicken breast

  • 1 cup chopped fresh or canned pineapple, well drained

  • cup barbecue sauce

  • ¼ cup chopped pickled jalapeno peppers

  • 1 ½ cup shredded Monterrey Jack cheese (6 oz.)

  • 6 tablespoon melted butter

  • 2 tablespoon honey

  • 1 tablespoon Worcestershire sauce

  • ½ teaspoon black pepper

  • Sliced fresh jalapeno chile peppers (optional)

Directions

  1. Preheat oven to 350°F. Arrange bottoms of rolls in a 13x9-inch baking pan or 3-qt. rectangular baking dish. In a bowl combine the next four ingredients (through pickled jalapeno peppers). Spoon onto roll bottoms. Top with cheese and roll tops.

  2. In a bowl combine the next four ingredients (through black pepper). Drizzle over rolls.

  3. Bake, covered, 15 minutes. Uncover; bake 10 to 15 minutes more or until cheese is melted and roll tops are light brown.

Make Ahead

Assemble the sandwiches and do not drizzle with butter mixture. Cover and refrigerate up to 8 hours. Drizzle and bake as directed.
