Sweet Potatoes with Toasted Coconut

Directions

  1. Place sweet potatoes in a steamer basket. Place basket in a very large skillet over 1 inch of boiling water. Steam the sweet potatoes, covered, 8 to 10 minutes or until just tender. Remove steamer basket. Pour water out of skillet; carefully wipe skillet with paper towels.
  2. In the same skillet combine coconut milk, oil, honey, and pumpkin pie spice. Bring to boiling; reduce heat. Add sweet potato pieces. Simmer, uncovered, 4 to 6 minutes or until potatoes are well coated and most of the liquid is absorbed, stirring frequently.
  3. Transfer sweet potatoes to a serving dish. Sprinkle with toasted coconut.

*Tip

Use the tablespoon measure for the oil before using it to measure the honey. The oil-coated spoon will help the honey come out of the measuring spoon easier.
