Sweet Potatoes with Honey, Prosciutto, and Kale
Preheat oven to 375 degrees F. Peel sweet potatoes; cut crosswise into 1/4-inch slices. Arrange sweet potatoes in a 2-quart square baking dish. Add the water; sprinkle with salt and pepper. Bake, covered, about 30 minutes or until potatoes are tender; drain.
In a large skillet heat oil over medium heat. Add kale and shallot. Cook for 3 to 5 minutes or until kale is tender, stirring occasionally. Add prosciutto and honey. Cook and stir about 1 minute more or until mixture is evenly coated with honey and heated through. Serve kale mixture over potatoes.
