Sweet Potato Spiral Saute

This a spiralized veggie side dish recipe the whole family will enjoy. Candy-like sweet potatoes get tossed with almond butter and Asian-influenced ingredients for a 20 minute side dish that's healthy, too!

Ingredients

  • 4 teaspoon olive oil

  • 2 medium sweet potatoes (about 10 oz. each), peeled and spiral sliced

  • 2 cloves garlic, minced

  • 2 tablespoon water

  • 2 tablespoon lime juice

  • 1 tablespoon almond butter or peanut butter

  • 1 teaspoon reduced-sodium soy sauce

  • 1 teaspoon toasted sesame oil

  • ½ teaspoon ground ginger

  • 2 tablespoon sliced green onions

  • 2 tablespoon chopped toasted almonds

  • 2 tablespoon chopped fresh cilantro

  • Lime wedges (optional)

Directions

  1. In an extra-large skillet heat olive oil over medium-high. Add sweet potatoes and garlic. Cook and gently stir occasionally about 4 minutes or until potatoes are crisp-tender.

  2. In a small bowl whisk together the next six ingredients (through ginger) Add to skillet with potatoes; toss gently to coat. Transfer to serving dish. Top with green onions, almonds, and cilantro. If desired, serve with lime wedges.
