Sweet Potato Rose Tartlets

Directions

  1. Preheat oven to 375 degrees F. Coat ten 3 1/4-inch muffin cups* with nonstick cooking spray. Set aside.
  2. Fill a large bowl half full with warm water; stir in 1 tablespoon salt until dissolved. Using a mandoline, cut sweet potato halves crosswise into 1/8-inch-thick half-moon slices and place in water. Let stand 10 minutes; drain well. Place on paper towels and pat dry.
  3. On a lightly floured work surface, roll a puff pastry sheet to a 10-inch square. Cut sheet into five 2-inch wide strips. Separate one strip from the sheet. Arrange slices of sweet potato lengthwise along puff pastry strip with flat sides of potato slices aligned with center of puff pastry strip and round sides of potato slices extending over one long side of the pastry, overlapping slices about 1/2 inch. After sweet potato slices are placed along entire dough strip, fold bottom edge of the puff pastry strip up over the slices. Roll dough strip loosely in a spiral to make a rose. Place into prepared muffin cups. Repeat with remaining puff pastry and sweet potato slices.
  4. Bake 45 minutes or until golden brown and tender, covering loosely with foil the last 10 minutes of baking time. Cool 5 minutes, remove from pan. Drizzle with ice cream topping. Serve warm.
