  • In a large saucepan cook sweet potatoes, covered, in enough boiling water to cover 12 to 15 minutes or until very tender; drain. Cool slightly.

  • In a food processor, combine drained sweet potatoes and the next seven ingredients (through salt). Process until smooth, scraping down sides of container as necessary. Cover and chill 2 to 8 hours.

  • Top dip with pumpkin seeds and cilantro. Serve with desired dippers.
