You'll be surprised at how much better homemade sweet potato fries are than their diner counterparts. Slightly crispy and creamy on the inside, these fries are worth the effort.

Ingredients

  • 4 medium sweet potatoes, peeled (if desired)

  • 2 tablespoon olive oil

  • Salt

  • Ground black pepper

  • Snipped Italian (flat-leaf) fresh parsley (optional)

Directions

  1. Preheat oven to 400°F. Line two baking sheets with foil; set aside.

  2. Cut sweet potatoes lengthwise into 1/2-inch strips. Place sweet potatoes in a large bowl. Drizzle with oil; toss to coat.

  3. Arrange sweet potatoes in a single layer on the prepared baking sheets. Bake for 10 to 15 minutes. Turn sweet potatoes. Bake for 10 to 15 minutes more or until lightly browned. Season to taste with salt and pepper. If desired, sprinkle with parsley.

Tips

For extra flavor, sprinkle the sweet potatoes with 1 tablespoon sugar, 1 teaspoon ground cumin, and 1 teaspoon chili powder before baking as directed.
