Sweet Cashew Cream

Directions

  1. In a small bowl combine cashews and enough boiling water to cover. Let stand, covered, 15 minutes; drain. Rinse and drain again.
  2. In a blender or food processor combine soaked cashews and remaining ingredients. Cover and blend or process 5 minutes or until smooth and creamy. Store in refrigerator up to 1 week.

Savory Cashew Cream

Prepare as directed, except omit maple syrup and vanilla. Stir in 1/2 tsp. lime or lemon zest; 1 tsp. lime or lemon juice; 1 clove garlic, minced; and, if desired, 1/4 tsp. ground chipotle chile pepper.
