  • Preheat oven to 400°F. In a small bowl combine sugar and cinnamon. Line a large baking sheet with parchment paper. In a medium saucepan combine the water, butter, and salt. Bring to boiling over medium. Add flour all at once; stir vigorously. Cook and stir until mixture forms a ball, 1 to 2 minutes. Cool 10 minutes. Add eggs, one at a time, beating well after each addition.

  • Drop 15 heaping tablespoons of dough onto prepared baking sheet. Sprinkle generously with the cinnamon-sugar mixture.

  • Bake 30 to 35 minutes or until golden and firm. Remove churro puffs to a wire rack; let cool.

  • Before serving, cut tops from cream puffs; remove soft dough from inside. Fill each with a rounded tablespoon of dulce de leche. Add a spoonful of Sweetened Whipped Cream, pudding, or ice cream. Replace tops.

Making Cream Puff Dough, Step-by-Step

Using a wooden spoon, vigorously stir dough in saucepan over heat until it forms a ball that doesn't separate.Remove pan from heat. Let dough cool 10 minutes. Beat in eggs, one at a time. Beat until the dough is smooth before adding the next egg.

Sweetened Whipped Cream

In a chilled mixing bowl beat 1 cup heavy cream, 2 Tbsp. granulated sugar, and 1/2 tsp. vanilla with a mixer on medium until soft peaks form.
