Cover and refrigerate at least 6 hours or overnight. The water should have a nice pink hue and the strawberries will look less red and a little mushy. Strain water through a fine mesh sieve; discard strawberries. Before serving, slice 4 or 5 additional strawberries in half lengthwise, leaving the tops on for color; place in the pitcher with strawberry water.
