  • Divide cookie crumbs among twelve 4-ounce jars; set aside.

  • In a medium bowl beat together cream cheese, granulated sugar, and lemon juice with a mixer on medium until smooth; set aside. In another medium bowl beat heavy cream and powdered sugar with the mixer on medium until stiff peaks form. Gradually fold whipped cream mixture into cream cheese mixture.

  • In a blender puree strawberries until smooth. Stir strawberry mixture, poppy seeds, and food coloring (if using) into the cream cheese mixture. Divide mixture among jars. Cover each and chill at least 4 hours or up to 3 days.

  • Top each jar with a few mint leaves to resemble a strawberry top before serving.
