Strawberry Poppy Seed Cheesecake Jars

Use these mini cheesecakes in a jar as an easy make-ahead dessert idea for your next gathering. It makes enough mini desserts to serve 12 and can be made and refrigerated up to three days before your party.

Ingredients

  • 9 vanilla sandwich cookies (Oreos®) or vanilla wafer cookies, crumbled

  • 1 8 ounce package cream cheese, softened

  • 2 tablespoon granulated sugar

  • 1 tablespoon lemon juice

  • 1 cup heavy cream

  • 1 tablespoon powdered sugar

  • 8 ounce strawberries, hulled

  • 1 tablespoon poppy seeds

  • Red food coloring (optional)

  • Mint leaves

Directions

  1. Divide cookie crumbs among twelve 4-ounce jars; set aside.

  2. In a medium bowl beat together cream cheese, granulated sugar, and lemon juice with a mixer on medium until smooth; set aside. In another medium bowl beat heavy cream and powdered sugar with the mixer on medium until stiff peaks form. Gradually fold whipped cream mixture into cream cheese mixture.

  3. In a blender puree strawberries until smooth. Stir strawberry mixture, poppy seeds, and food coloring (if using) into the cream cheese mixture. Divide mixture among jars. Cover each and chill at least 4 hours or up to 3 days.

  4. Top each jar with a few mint leaves to resemble a strawberry top before serving.
