In a medium bowl beat together cream cheese, granulated sugar, and lemon juice with a mixer on medium until smooth; set aside. In another medium bowl beat heavy cream and powdered sugar with the mixer on medium until stiff peaks form. Gradually fold whipped cream mixture into cream cheese mixture. In a blender puree strawberries until smooth. Stir strawberry mixture, poppy seeds, and food coloring (if using) into the cream cheese mixture. Divide mixture among jars. Cover each and chill at least 4 hours or up to 3 days. Top each jar with a few mint leaves to resemble a strawberry top before serving.
