Bring to boiling, stirring until sugar dissolves. Reduce heat; simmer 5 minutes. Remove from heat. Add chopped mint; cover and let steep 30 minutes. Using a fine-mesh strainer, strain syrup to remove mint and berries. Let cool. In a pitcher combine 3 cups cold water, the simple syrup, lemon zest, and lemon juice. Add lemon slices along with additional strawberry slices and mint leaves. Chill up to 4 hours before serving. Serves 8.
