Strawberry Margarita Dessert Sauce

Directions

  1. Coarsely chop strawberries and place in a 6- to 8-quart pot. Remove 3 tablespoons zest and squeeze 2 tablespoons juice from limes. Add lime zest and juice, sugar, and tequila to pot. Bring to boiling; reduce heat. Simmer, uncovered, 25 minutes or until slightly thickened, stirring occasionally. If desired, mash slightly with a potato masher or blend to desired consistency.
  2. Ladle hot sauce into hot sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids and screw bands.
  3. Process filled jars in a boiling-water canner 10 minutes (start timing when water returns to boiling). Remove; cool on wire racks.

Peach Bellini:

Prepare as directed, except substitute fresh peaches, peeled and chopped, for the strawberries; lemon zest and juice for the lime zest and juice; and Prosecco or champagne for the tequila.

Raspberry Mule:

Prepare as directed, except substitute fresh raspberries for the strawberries (do not chop) and vodka for the tequila. Omit lime zest and reduce lime juice to 1 tablespoon. Add 1 tablespoon finely chopped crystallized ginger. If desired, strain sauce and discard seeds before filling jars.

Blackberry Mojito:

Prepare as directed, except substitute fresh blackberries for the strawberries (do not chop) and dark rum for the tequila. Add 2 sprigs fresh mint; remove and discard before filling jars.

Cherry Amaretto:

Prepare as directed, except substitute frozen unsweetened pitted tart red cherries, thawed, for the strawberries (do not chop) and almond liqueur for the tequila. Omit lime zest and juice. Increase cooking time to 45 minutes or until reduced by half.

Rhubarb Smash:

Prepare as directed, except substitute fresh or frozen unsweetened sliced rhubarb for the strawberries (do not chop), lemon juice for the lime juice (omit lime zest), and bourbon for the tequila. Add 2 large sprigs fresh basil; remove and discard before filling jars.

If you do not want to use alcohol in the dessert sauces, substitute fruit nectar, fruit juice, and/or water.
