Bring just to boiling over high heat; reduce heat to medium-high. Cook and stir 2 minutes or until fruit is tender; remove from heat. Stir in remaining ingredients; cool slightly. Transfer mixture to a blender; cover and blend until smooth. Press through a fine-mesh sieve into a bowl; discard pulp. Pour fruit puree into a 2-qt. square baking dish. Freeze 2 hours, stirring and scraping frozen mixture off bottom and sides every 30 minutes. Cover and freeze, without stirring, 6 hours more or until firm. Let stand at room temperature 5 to 10 minutes before serving. Scrape surface of granita and spoon into dishes. *Tip Only add the almond extract if you're making the granita with cherries. (Almond naturally enhances cherry flavor.)
