Trim fat from meat. Cut meat into 1-1/2-inch pieces. Lightly coat an unheated 12-inch skillet with cooking spray. Preheat skillet over medium heat. Brown meat, half at a time, in hot skillet. Drain off fat.
In a 3-1/2- or 4-quart slow cooker, combine meat, potatoes, and carrots. In a medium bowl, combine gravy and plum sauce; pour over meat mixture.
Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-1/2 to 4 hours. Makes 6 servings.
