Directions

  1. In a large saucepan combine broth, milk, and salt. Bring to boiling over medium-high heat. Reduce heat to medium-low; slowly whisk in cornmeal. Cook for 5 to 10 minutes or until thick and bubbly, and cornmeal is tender, stirring constantly.
  2. Stir in goat cheese and thyme until cheese is melted.
  3. Stir in spinach just until wilted. Season to taste with salt and pepper. Sprinkle with pine nuts.

*TO TOAST NUTS:

To toast pine nuts, preheat oven to 350 degrees F. Spread pine nuts in a shallow baking pan. Bake for 5 to 10 minutes or until light brown, watching carefully and shaking once or twice.
