Spicy Three-Meat Picnic Hero

We piled a lot on this picnic sandwich—ham, pepperoni, salami, pepperoncini peppers, and tomatoes, just to name a few. And while this sandwich is piled so high that it might test your jaw strength, it's also perfect for sharing at a potluck or picnic.

Ingredients

  • 1 16 ounce loaf ciabatta or French bread

  • ½ cup Thousand Island salad dressing

  • 4 ounce thinly sliced cooked ham or turkey

  • 3 ounce thinly sliced large pepperoni

  • 3 ounce thinly sliced salami

  • 1 cup thinly sliced pepperoncini salad peppers

  • 1 - 2 medium roma tomatoes, thinly sliced

  • teaspoon coarse ground black pepper

  • 2 cup shredded bibb or iceberg lettuce

  • 6 ounce thinly sliced Swiss or mozzarella cheese

Directions

  1. Cut bread in half horizontally. Using a spoon, hollow out inside of top half, leaving a 3/4-inch shell. Spread cut sides of top and bottom halves with dressing.

  2. Layer bottom half of bread with ham, pepperoni, and salami. Add pepperoncini peppers and tomato slices; sprinkle tomatoes with black pepper. Top with lettuce and cheese. Replace top of bread; press lightly.

  3. Tightly wrap sandwich in foil or plastic wrap to tote. Chill up to 24 hours. To serve, cut into portions and, if needed, insert toothpicks to hold together.
