Spicy Soy-Marinated Flank Steak

Marinades enhance the flavor of steak, but they don't penetrate deeply. This spicy soy-marinade is simple to make but complex in flavor.

Ingredients

  • 1 1.25 pound beef flank steak, trimmed

  • 1 recipe Spicy Soy Marinade

  • 1 3 ounce package ramen noodles (any flavor)

  • 1 cup thin bite-size strips carrots

  • 1 cup lengthwise-sliced sugar snap pea pods

  • ¼ cup loosely packed fresh cilantro leaves

  • 2 tablespoon sliced almonds, toasted

Spicy Soy Marinade

  • ¼ cup soy sauce

  • 2 tablespoon rice vinegar

  • 2 tablespoon vegetable oil

  • 1 teaspoon finely shredded lime peel

  • 2 tablespoon lime juice

  • 1 tablespoon grated fresh ginger

  • 1 teaspoon Asian chili sauce

  • 1 teaspoon toasted sesame oil (optional)

  • 2 cloves garlic, minced

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Directions

  1. Score both sides of meat in a diamond pattern. Place meat in a resealable plastic bag set in a shallow dish. Prepare Spicy Soy Marinade; set aside 3 Tbsp. Pour remaining marinade over meat. Seal bag; turn to coat meat. Marinate in the refrigerator 2 to 4 hours, turning bag occasionally.

  2. Drain meat, discarding marinade. Grill meat, uncovered, over medium heat 17 to 21 minutes for medium (160°F), turning once. Cover and let stand 5 minutes. Thinly slice meat diagonally across the grain into bite-size strips.

  3. Prepare ramen noodles according to package directions, discarding seasoning packet. Drain noodles. If desired, snip into shorter pieces. In a large bowl combine meat, noodles, reserved 3 Tbsp. marinade, carrots, snap peas, and cilantro. Sprinkle with almonds.

Spicy Soy Marinade

  1. In a small bowl combine soy sauce, rice vinegar, vegetable oil, lime peel, lime juice, ginger, Asian chili sauce, sesame oil (if desired), salt, black pepper, and garlic.
