Spicy Chicken-Coconut Noodle Soup

Ingredients

  • 2 tablespoon vegetable oil

  • 1 cup thinly sliced fresh button mushrooms

  • ½ cup chopped onion

  • 2 tablespoon grated fresh ginger

  • 1 teaspoon crushed red pepper

  • 6 cup reduced-sodium chicken broth

  • 2 cup coarsely shredded cooked chicken

  • 1 14 ounce can unsweetened coconut milk

  • 1 ¼ cup red bell pepper strips

  • 2 tablespoon fish sauce

  • 4 ounce dried maifun brown rice or white rice noodles, broken

  • 3 tablespoon lime juice

  • 2 tablespoon chopped fresh cilantro

  • Green onion strips and/or lime wedges (optional)

Directions

  1. In a 5- to 6-qt. Dutch oven heat oil over medium. Add mushrooms, onion, ginger, and crushed red pepper; cook 5 minutes or until vegetables are tender, stirring occasionally.

  2. Add next five ingredients (through fish sauce). Bring to boiling. Stir in noodles; reduce heat. Simmer 2 to 4 minutes or just until noodles are tender. Stir in lime juice and cilantro. If desired, top servings with green onions and/or serve with lime wedges.
