Spiced Oatmeal Pancakes

Warm up these easy oatmeal pancakes with a dash of apple pie spice and spicy sauteed apples. To add fiber to these healthy pancakes, we call for a mix of oats and whole wheat flour.

  • ½ cup regular rolled oats

  • ¾ cup white whole wheat flour

  • 1 ½ teaspoon packed brown sugar

  • 1 ½ teaspoon baking powder

  • ¼ teaspoon apple pie spice

  • Dash salt

  • 1 cup fat-free milk

  • cup refrigerated or frozen egg product, thawed

  • 2 tablespoon canola oil

  • 1 recipe Sautéed Apples

  • 1 cup sugar-free maple-flavor syrup, warmed

Sautéed Apples

  • 2 tart cooking apples, cored and sliced

  • 2 teaspoon canola oil

  • ¼ teaspoon apple pie spice


  1. Place rolled oats in a blender or food processor. Cover and blend or process until very fine, resembling flour. In a large bowl combine ground oats, white whole wheat flour, brown sugar, baking powder, apple pie spice, and salt.

  2. In a medium bowl combine milk, egg, and oil. Add milk mixture to flour mixture and whisk just until combined (mixture should be lumpy).

  3. For each pancake, pour about 1 tablespoon of the batter onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown, turning to second side when pancakes have bubbly surfaces and edges are slightly dry. Serve warm with Sautéed Apples and maple syrup.

Sautéed Apples

  1. In a large skillet cook apples in hot oil over medium-high heat until apples are golden brown. Sprinkle with apple pie spice.

Spiced Plum Topper

In a 10-inch skillet heat 1 Tbsp. olive oil over medium. Add 2 plums, pitted and coarsely chopped; 1 cup seedless red grapes, halved; and 1/4 tsp. ground cinnamon. Cook and stir 2 minutes. Stir in 1/2 cup pomegranate juice and 1 Tbsp. honey. Bring to boiling; reduce heat. Simmer, uncovered, 3 to 5 minutes or until syrupy. Cool slightly.
