Ingredients

  • 2 pound butternut squash, peeled, seeded, and cut into 1-inch pieces

  • 1 14 ounce can vegetable broth

  • 1 cup orange juice

  • 1 cup chopped onion (1 large)

  • ¾ cup dried cherries

  • 1 tablespoon olive oil

  • 2 teaspoon honey

  • 3 cloves garlic, minced

  • ½ teaspoon ground cumin

  • ½ teaspoon paprika

  • ¼ teaspoon ground cinnamon

  • 1 cup quick-cooking couscous

  • ½ cup sliced almonds, toasted

Directions

  1. Preheat oven to 375ºF. Lightly grease a 2- to 2-1/2-quart rectangular baking dish.

  2. In a large bowl combine squash, broth, orange juice, onion, dried cherries, oil, honey, garlic, cumin, paprika, and cinnamon. Transfer to prepared baking dish. Cover with foil. Bake for 1 hour.

  3. Stir mixture. Bake, uncovered, about 30 minutes more or until squash is tender.

  4. Remove from oven. Stir in dry couscous. Cover and let stand for 10 minutes before serving. Garnish with almonds.
