Directions

  1. Trim fat from meat. Cut meat into bite-size strips. Lightly coat a large saucepan with cooking spray; heat saucepan over medium-high heat. Add meat; cook and stir about 2 minutes or until brown.
  2. Stir in broth, tomato paste, salsa, and cumin. Stir in zucchini and soybeans. Bring to boiling; reduce heat. Simmer, covered, about 10 minutes or until vegetables are tender. Top each serving with mango and, if desired, cilantro.

*Tip:

If you prefer, use regular salsa and stir in 2 tablespoons snipped fresh cilantro. In place of fresh mango, use refrigerated mango slices, rinsed, drained, and chopped (or use frozen chopped mango, thawed).
