Directions
- In large pot combine squash, carrots, zucchini, potatoes, onions, green beans, garlic, salt, Italian seasoning (if desired), and pepper. Add water. Bring to boiling; reduce heat. Cover and simmer about 40 minutes or until vegetables are very tender. Cool slightly. Drain off 1 cup of the cooking liquid; set aside. Keep the remaining cooking liquid with the vegetables.
- Place a portion of the vegetable mixture at a time in a blender container or food processor bowl. Cover and blend or process until smooth. Stir in part or all of the reserved cooking liquid to reach the consistency you like. Makes 8 side-dish servings.
