  • In a large saucepan combine chicken broth, water, lentils, celery, carrot, onion, dried thyme (if using), cayenne pepper, and garlic. Bring to boiling; reduce heat. Simmer, covered, for 20 to 25 minutes or until vegetables and lentils are tender. Stir in sausage and fresh thyme (if using). Heat through. Makes 5 servings (7 cups).


Brown Lentil Substitutions for Lentil Soup

Brown lentils are usually easy to find, but if your pantry is already stocked with French green lentils, those will work great in this lentil soup. We don't recommend red lentils here because they cook much faster (just 5 to 10 minutes) and will break down too much.

I used Jennie-O Sweet Italian Turkey Sausage, and I added more salt. This was delicious! Will definitely make it again.

Needs more salt (lentils tend to need it). To help with the lack of salt issue, I usually make a double batch and add 1/2 pound of bacon (crisped up). It also freezes well.
