Ingredients

  • 1 tablespoon vegetable oil

  • 1 tablespoon butter or margarine

  • 1 cup chopped red onion (1 large)

  • 6 cloves garlic, minced (2 tablespoons)

  • 3 medium avocados, halved, seeded, peeled, and mashed (1-3/4 cups)

  • 1 14.5 ounce can chicken broth or vegetable broth

  • 1 ½ cup whipping cream

  • 1 cup bottled salsa

  • 2 tablespoon lime juice

  • 2 tablespoon lemon juice

  • 1 tablespoon ground cumin

  • Assorted toppings, such as avocado slices, chopped red or yellow tomato and/or onion, tortilla chips, lime wedges, fresh cilantro, sour cream, and/or cooked shrimp (optional)

Directions

  1. In a 3-quart saucepan heat oil and butter over medium heat; add onion and garlic. Cook and stir onion and garlic about 5 minutes or until tender. Stir in avocados, broth, whipping cream, salsa, lime juice, lemon juice, and cumin; heat through.

  2. To serve, ladle soup into bowls. If desired, serve with assorted toppings.
