In a large saucepan stir together pumpkin, coconut milk, and broth. Coarsely chop thawed vegetables and add to pan. Stir in brown sugar, jalapeno pepper, and salt.
Bring mixture to boiling; reduce heat. Simmer, uncovered, for 10 minutes until heated through, stirring frequently. Stir in cilantro or parsley before serving. Garnish with toasted coconut, if desired. Makes 8 to 12 appetizer servings.
