"Creamless" Creamy Wild Rice Soup

Directions

  1. In a 3-quart saucepan, cook the onion, celery, and carrots in 1 tablespoon hot butter for 3 to 4 minutes or until tender. Stir in wild rice; cook and stir for 1 minute. Add chicken broth, rosemary, and thyme. Bring to boiling; reduce heat. Cover and simmer for 40 minutes or until rice is tender. Stir in milk and milk powder. Combine flour and 1 tablespoon softened butter; whisk into soup. Cook and stir until slightly thickened and bubbly. Cook and stir 1 minute more. Stir in bacon. Season with pepper to taste. Makes 6 servings.
