Smoky Sweet and Sour Cantaloupe

Directions

  1. Cook bacon in a very large nonstick skillet until crisp. Remove bacon to paper towels to drain, reserving 1 tablespoon drippings in skillet. Crumble bacon. Cook onion in reserved drippings over medium heat until tender. Add chili sauce, vinegar, cantaloupe, and bacon; heat through. Serve over rice and top with cashews.
