For marinade, in a small bowl combine remaining ingredients. Pour marinade over chicken. Seal bag; turn to coat chicken. Marinate in refrigerator 30 to 60 minutes, turning bag once. Drain chicken, reserving marinade. Grill chicken, covered, over medium heat 15 to 18 minutes or until done (165°F), turning and brushing with reserved marinade halfway through. If desired, top with additional mint.
