  • Preheat oven to 350°F. Lightly grease a 13x9x2-inch baking pan; set aside. In a large bowl combine soup, sour cream, and cheese. Stir in hash brown potatoes and chicken. Transfer mixture to the prepared baking pan. If desired, in a small bowl combine crushed croutons and melted butter; sprinkle over chicken mixture.

DELICIOUS and.a hit at any potluck, too! And easy to make. I just shred & use the whole 8oz block of shredded smoked cheddar (or I use a bag of regular shredded sharp cheddar & 3 tsp liquid smoke to save time or $). I also add 1/2 tsp each salt & thyme, a pinch of pepper & a TBSP cornstarch to the soup to make thicker.

So easy, so tasty, hubby & I both loved it---and always a hit at a potluck!! My smoked cheddar was 8 ounces instead of 6, just grated & used the whole thing since I used my own seared chicken, not smoked. I make the crock pot version (also on BHG site, same ingredients) & to make it even better I add 1/2 teaspoon each dried thyme & salt, & a bit of pepper and a tablespoon of cornstarch mixed into the soup, We really like the smoky character so I add a teaspoon of liquid smoke. Find smoked cheddar (chunk form) in the deli cheese display in almost any grocery store, where they have all the different varieties.
