Smoky Cheesy Chicken-Potato Casserole

Directions

  1. Preheat oven to 350 degrees F. Lightly grease a 13x9x2-inch baking pan; set aside. In a large bowl combine soup, sour cream, and cheese. Stir in hash brown potatoes and chicken. Transfer mixture to the prepared baking pan. If desired, in a small bowl combine crushed croutons and melted butter; sprinkle over chicken mixture.
  2. Bake for 40 to 50 minutes or until heated through. If desired, garnish with fresh thyme.

DELICIOUS and.a hit at any potluck, too! And easy to make. I just shred & use the whole 8oz block of shredded smoked cheddar (or I use a bag of regular shredded sharp cheddar & 3 tsp liquid smoke to save time or $). I also add 1/2 tsp each salt & thyme, a pinch of pepper & a TBSP cornstarch to the soup to make thicker.
