  • In a Dutch oven combine the ham, carrot, curry powder, and paprika. Cook and stir over medium heat for 2 minutes. Stir in milk. Cook, uncovered, for 4 to 5 minutes, just until milk is hot but not boiling, stirring occasionally. Gradually whisk in mashed potatoes. Cook, stirring frequently, until hot and bubbly. Stir in the cheese and flour. Cook and stir for 2 minutes, just until cheese is melted.

  • Ladle soup into bowls. Top with shoestring potatoes, parsley, and/or paprika.

Change Up:

For a vegetarian version, replace the ham with 1 cup of cooked cannellini beans, rinsed and drained well. Substitute chopped fresh chives for the parsley.

4 stars, season w/some salt & pepper, but delicious, hearty & oh-so-easy even made my thrifty way w/1-1/2 cups shredded regular sharp cheddar & a few dashes (to taste) liquid smoke instead of smoked cheese, and I just mashed a couple of my own large potatoes that I'd boiled with a couple cloves crushed garlic. I also cooked the carrot in a little bit of veg oil for a couple minutes 1st to soften a little. I don't know how or where, but the version I printed out called for ham OR 1 cup drained/rinsed cannelloni beans & I made the bean version (using the whole can) & it was delicious & hearty.
