Smoked Trout Potato Salad

Turn classic potato salad into a main-dish dinner by adding smoked trout, fresh greens, and herbs.

Ingredients

  • 1 medium English cucumber, thinly sliced (2 cups)

  • 1 thinly sliced shallot (1/3 cup)

  • ¼ cup chopped fresh dill

  • ¼ cup white wine vinegar

  • 1 teaspoon kosher salt

  • 4 cup desired mixed salad greens

  • 1 pint deli potato salad

  • 2 8 ounce packages smoked trout, skin removed and flaked

Directions

  1. In a medium bowl combine cucumbers, shallot, dill, vinegar, and salt. Let stand 20 minutes.

  2. To serve, top greens and potato salad with trout and cucumber mixture.
