Smashed Chickpea Salad Sandwiches

Inexpensive and protein-packed, chickpeas become the perfect vehicle for a quick and easy salad for sandwiches. Try skipping the bread and enjoy a scoop in a lettuce wrap.

  • 1 15 ounce can chickpeas, rinsed and drained

  • ½ cup shredded carrot

  • ¼ cup mayonnaise

  • ¼ cup chopped dill pickles

  • 2 teaspoon Dijon-style mustard

  • ¼ teaspoon dried dill

  • 4 small ciabatta rolls, soft dinner rolls, or focaccia wedges, split

  • 4 slices tomato

  • 1 cup fresh baby kale or spinach

  • 2 thin slices red onion, separated into rings


  1. In a medium bowl slightly mash chickpeas. Stir in next five ingredients (through dill). Fill rolls with tomato slices, chickpea mixture, kale, and red onion.
