Slow Cooker Wheat Berry Tabbouleh

Directions

  1. In a 4- to 5-quart slow cooker combine the first three ingredients (through wheat berries). Cover and cook on low for 7 1/2 to 8 hours or until wheat berries are tender.
  2. Use a slotted spoon to transfer wheat berry mixture to a large bowl. Cool to room temperature. Stir in the next four ingredients (through mint).
  3. For dressing, in a screw-top jar combine the next four ingredients (through garlic salt). Cover and shake well. Pour dressing over wheat berry mixture; toss gently to coat. Top with chicken. Cover and chill 4 to 24 hours. Sprinkle with cheese before serving.

For Easy Cleanup:

Line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
