Not all falafel recipes are fried. This one fits in your vegetarian slow cooker recipe file! Tuck a few of the chickpea "sliders" inside a pita with fresh spinach, tomatoes, onion, and a yogurt-herb sauce for a delicious dinner.

Slow Cooker Falafel

  • In a medium bowl mash beans with a fork. In a blender or food processor combine the next 10 ingredients (through pepper). Cover and blend or process until smooth. Stir into mashed beans; stir in bread crumbs (mixture will be soft and moist). Shape into eight balls; flatten slightly.

  • Pour oil into a 6-quart oval slow cooker. Add falafel patties, turning to coat. Cover and cook on high for 4 to 5 hours or until browned, turning once.

  • Serve patties on flatbreads with spinach, tomatoes, and/or sliced onion. Top with Yogurt Sauce.

Tips

To make a salad, omit flatbreads. In a bowl combine 4 cups torn lettuce; 1 medium tomato, chopped; 1/2 cup sliced cucumber; and 2 tablespoons slivered red onion. Whisk 2 tablespoons water into Yogurt Sauce and use as a dressing. Top with falafel patties.

For Easy Cleanup:

Line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
