Sloppy Joe Tostadas with Yams and Black Beans

Directions

  1. Preheat oven to 425 degrees F. In a large skillet cook ground beef, ground turkey, and sweet potato over medium heat until meat is brown, using a wooden spoon to break up meat as it cooks. Drain off fat. Stir in tomatoes, the water, tomato paste, chili powder, vinegar, and salt. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until sweet potato is tender and mixture is desired consistency, stirring occasionally.
  2. Meanwhile, place tortillas on a baking sheet. Coat both sides of tortillas with cooking spray. Bake about 7 minutes or until tortillas are crisp and starting to brown.
  3. In a medium microwave-safe bowl coarsely mash beans with a fork or potato masher just until they cling together. If needed, add 1 to 2 tablespoons of water to the beans to help mash. Microwave on 100 percent power (high) for 1 to 2 minutes or until heated through.
  4. To serve, spread mashed beans on tortillas. Spoon meat mixture on top of beans. Sprinkle with queso fresco and, if desired, cilantro.
