Shortcut Vegetarian Dumpling Soup

Ingredients

  • 4 green onions

  • 1 tablespoon canola oil

  • 1 tablespoon finely chopped fresh ginger

  • 3 cloves garlic, minced

  • 1 32 ounce carton reduced-sodium vegetable broth

  • 1 cup water

  • 1 - 2 tablespoon Asian chili paste (sambal oelek)*

  • 2 9.5 ounce pkg. frozen vegetable pot stickers

  • ½ cup frozen edamame

  • 2 cup shredded red cabbage

  • 2 teaspoon white and/or black sesame seeds*, toasted

  • 2 tablespoon toasted sesame oil

Directions

  1. Cut green onions into 1-inch pieces, separating white and green parts. In a 4- to 5-qt. Dutch oven heat canola oil over medium. Add white parts of onions, ginger, and garlic; cook 3 minutes, stirring occasionally. Add broth, the water, and chili paste.

  2. Bring to boiling. Add pot stickers and edamame. Return to boiling; reduce heat. Simmer 5 minutes or until pot stickers are cooked through. Stir in cabbage; cook 1 minute more. Top servings with green parts of onions and sesame seeds and drizzle with sesame oil.

*Shopping Tip

Asian chili paste (sambal oelek) is a bright, spicy condiment of chile peppers, vinegar, and salt. Look for it in the Asian food aisle in large supermarkets. Black sesame seeds can be found at specialty spice stores.
