Shortcut Pho

If you like your pho with a spicy kick, finish with sriracha, chile slices, and/or chili oil.

  • 1 lime, halved

  • 4 cup 50%-less-sodium beef broth

  • 1 tablespoon fish sauce

  • teaspoon cinnamon

  • teaspoon coriander

  • Dash ground cloves

  • 12 ounce beef sirloin steak, very thinly sliced

  • 8 ounce rice noodles, cooked

  • ½ cup chopped fresh cilantro

  • 1 bunch green onions, bias-sliced into 1-inch pieces

  • Lime wedges


  1. Juice half the lime; cut remaining half into wedges. In a 4-qt. pot combine lime juice, broth, fish sauce, cinnamon, coriander, and cloves. Bring to boiling; reduce heat. Simmer, uncovered, 15 minutes.

  2. Drop beef into simmering broth. Cook 20 to 30 seconds or until cooked through.

  3. Divide noodles among bowls. Spoon broth and beef over noodles. Top bowls with cilantro and green onions. Serve with lime wedges. Serves 4.
