Shortcut Lasagna

Directions

  1. Preheat oven to 350 degrees F. Lightly coat 2 2-quart baking dish with cooking spray;* set aside. In a large saucepan cook ground beef and sausage over medium-high heat until brown, using a wooden spoon to break up meat as it cooks. Drain off fat. Stir in pasta sauce. Bring to boiling.
  2. Meanwhile, in a medium bowl combine egg, ricotta cheese, and olives.
  3. To assemble, place about 1 cup of the hot meat mixture on the bottom of the dish to cover. Top with three of the noodles. Top with one-third of the ricotta mixture, one-third of the remaining meat mixture, and one-third of the mozzarella cheese. Repeat with two more layers of noodles, ricotta mixture, meat mixture, and mozzarella cheese. (Make sure the noodles are covered with sauce.) Sprinkle with Parmesan cheese.
  4. Bake, covered, for 30 minutes. Bake, uncovered, for 10 to 15 minutes more or until noodles are tender and cheese is golden. Let stand for 5 minutes before serving. If desired, garnish with fresh basil.

Can also be made in 2 9x5x3-inch loaf pans if you'd like to eat some now and freeze the other pan for later. o assemble, divide about 1 cup of the hot meat mixture between the prepared loaf pans, spreading to cover bottoms. Divide three of the noodles between pans, breaking as necessary to fit. Divide one-third of the ricotta mixture, one-third of the remaining meat mixture, and one-third of the mozzarella cheese between pans. Repeat with two more layers of noodles, ricotta mixture, meat mixture, and mozzarella cheese. (Make sure the noodles are covered with sauce.) Sprinkle with Parmesan cheese.
