Learn about BHG's Editorial Process Published on June 7, 2019 Print Rate It Share Share Tweet Pin Email Prep Time: 15 mins Bake Time: 20 mins Total Time: 35 mins Servings: 5 Yield: 5 cups chicken mixture plus 3 cups rice Jump to Nutrition Facts Ingredients Nonstick cooking spray ¼ cup hoisin sauce 2 tablespoon vegetable oil 2 tablespoon rice vinegar 2 tablespoon water 1 tablespoon minced garlic (about 6 cloves) 1 tablespoon reduced-sodium soy sauce ¼ teaspoon black pepper 1 ¼ - 1 ½ pound skinless, boneless chicken thighs, cut into 1-inch pieces 2 medium red and/or green bell peppers, cut in 1-inch pieces (2 cups) 1 medium onion, cut into thin wedges (1 cup) 1 bunch green onions, bias-sliced, white and green parts separated (2/3 cup white parts, 1 cup green parts) 1 cup dry-roasted cashews ¼ teaspoon toasted sesame oil 3 cup hot cooked white rice Sesame seeds, toasted (optional) Directions Preheat oven to 450°F. Line a 15x10x1-inch baking pan with foil and coat with nonstick cooking spray. Set aside. In a small bowl combine hoisin sauce, vegetable oil, vinegar, water, garlic, soy sauce, and black pepper. In the prepared pan combine chicken, bell peppers, onion wedges, and the white parts of the green onions. Add sauce mixture and toss to coat. Roast 20 minutes or until chicken is cooked through, stirring occasionally. Stir in the green parts of the green onions, cashews, and sesame oil. Serve with hot cooked white rice. Sprinkle with sesame seeds, if desired.
