  • Preheat oven to 450°F. Line a 15x10x1-inch baking pan with foil and coat with nonstick cooking spray. Set aside.

  • In a small bowl combine hoisin sauce, vegetable oil, vinegar, water, garlic, soy sauce, and black pepper.

  • In the prepared pan combine chicken, bell peppers, onion wedges, and the white parts of the green onions. Add sauce mixture and toss to coat.

  • Roast 20 minutes or until chicken is cooked through, stirring occasionally. Stir in the green parts of the green onions, cashews, and sesame oil. Serve with hot cooked white rice. Sprinkle with sesame seeds, if desired.
