Shaved Brussels Sprouts and Apricot Salad

Shaved Brussels Sprouts and Apricot Salad

  • 2 9 ounce pkg. shaved Brussels sprouts (11 cups total)

  • cup chopped dried apricots

  • ½ cup chopped red onion

  • 1 recipe Maple Vinaigrette

  • ¼ cup crumbled blue cheese

  • ¼ cup chopped toasted walnuts

  • Desired Protein Choice

Maple Vinaigrette

  • ¼ cup cider vinegar

  • 2 tablespoon olive oil

  • 2 tablespoon maple syrup

  • 2 teaspoon Dijon-style mustard

  • ½ teaspoon salt

  • ½ teaspoon black pepper


  1. In a large bowl combine Brussels sprouts, apricots, and onion. Add 1/4 cup Maple Vinaigrette; toss to coat. Divide among plates. Top with blue cheese and walnuts. Add Desired Protein Choice and drizzle with the remaining vinaigrette.

Maple Vinaigrette

  1. In a screw-top jar combine all ingredients. Cover and shake well.
