Ingredients

  • cup roasted salted pistachio nuts, finely chopped

  • cup chopped fresh parsley

  • 2 tablespoon chopped fresh mint

  • 1 tablespoon orange zest

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • teaspoon salt

  • 1 tablespoon olive oil

  • 1 pound salmon fillet, skinned and cut into 4 pieces

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Directions

  1. For pistachio gremolata, in a small bowl combine the first seven ingredients (through 1/8 teaspoon salt).

  2. In a very large skillet heat 1 Tbsp. olive oil over medium-high heat. Season salmon with 1/4 tsp. each salt and pepper. Carefully place salmon in skillet. Cook 3 minutes. Turn and cook 3 minutes more or just until salmon flakes. Top with pistachio gremolata.
