Shrimp-Topped Sole

Directions

  1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Arrange fish in a single layer in a greased 15x10x1-inch baking pan. Sprinkle with salt and freshly ground black pepper.
  2. In a medium bowl combine shrimp and semi-soft cheese. Spoon mixture on top of the fish fillets, spreading with the back of a spoon to cover fillet. Sprinkle with Parmesan cheese. Bake in a 425 degree F oven for 15 minutes or until fish begins to flake when tested with a fork. Sprinkle with fresh basil before serving.
  3. Makes 6 fillets

If you can't find this product, stir together 1/2 of an 8-ounce tub cream cheese spread with chive and onion or one 5.2-ounce container semi-soft cheese with garlic and herb and 2 tablespoons snipped oil-packed dried tomatoes.
