Nutty Parmesan Fish
- Thaw fish, if frozen. Measure thickness of fillets. Cut fish fillets into 1-inch-wide strips. Rinse and pat dry with paper towels; set aside.
- In a shallow dish combine egg and milk. In another shallow dish combine crushed crackers, Parmesan cheese, ground nuts, basil, and pepper. Dip fish pieces into egg mixture. Roll fish in crumb mixture. Place coated fish in a greased shallow baking pan.
- Drizzle melted margarine or butter over fish. Bake, uncoverd, in a 500 degree F oven for 10 to 15 minutes or until coating is golden and fish flakes easily with a fork. Serve Tartar Sauce with fish. Makes 4 servings
- For sauce, in a small bowl stir together mayonnaise or salad dressing, dill pickle or sweet pickle relish, green onion, parsley, pimiento, and lemon juice.
