Directions

  1. Thaw fish, if frozen. For glaze, in a dry small saucepan cook juniper berries over medium-high heat about 1 minute or until toasted, shaking the saucepan frequently. Carefully add vermouth, thyme, and rosemary. Bring to boiling. Stir in apple jelly; simmer about 1 minute or just until jelly is melted. Remove from heat.
  2. Rinse fish; pat dry with paper towels. Cut fish into 2 serving-size pieces. Heat a large nonstick skillet over high heat. Add fish, skin side up, to skillet. Cook about 2 minutes or until light brown. If using an ovenproof skillet, turn fish with a large spatula. If using a skillet that is not ovenproof, transfer fish, skin side down, to a 2-quart square baking dish. Sprinkle fish lightly with salt and pepper. Spoon the glaze over fish.
  3. Bake in a 400 degree F oven for 8 to 10 minutes or until fish flakes easily when tested with a fork and glaze is light brown. Makes 2 servings.

Prepare as above, except cut fish into 4 serving-size pieces and, if necessary, transfer to a 2-quart rectangular baking dish after browning (in step 2).
